Chocolate Cherry Fruitcake


This Christmas delight is a little work, but well worth the effort. It is designed for those folks who do not like citrus fruit in their fruitcake.


6 eggs, well beaten
2 cups sugar
3 cups sifted all purpose flour
3 teaspoons baking soda
1/2 teaspoon salt
1 large package 12 oz Semi Swee Chocolate Pieces
2 cups coarsely choped pecans or walnuts
1 cup golden raisins
2 cups coarsely cut dates
2 cups halved candied cherries (red and green)


Add sugar gradually to eggs. Beat until light and ceamy. Sift dry ingredients. Add chocolate pieces, nuts, raisins, dates and cherries to flour mixture Fold into egg-sugar mixture. Spoon into well greased and floured 10 inch tube (or bundt) pan. Bake at 325 for 1 hour 10 min. or until cake tests done. Cool in pan 10 minutes. Remove from pan. Cool on rack.
